Biryani, brought to India by the Mughals in the 1500s, blends local flavors with spiced rice, marinated meat, vegetables, and nuts. Tawa Biryani is cooked on a griddle rather than in the traditional dum style, giving it a unique name and character. Fragrant and colorful, biryani pairs well with Malbec or Pilsner.
